For me, this is the epitome of healthy eating. A salad packed with protein heavy lentils, perfectly roasted cauliflower, a slew of other hearty veggies, and topped with a finger-licking-good sauce. Because I don’t do wimpy salad. Never have, never will.
Vegetables on vegetables. If that isn’t healthy, I don’t know what is. Thanks to bright green pesto and perfectly roasted veggies (thank you natural sugars!) this dish is not only mega healthy, it is also mega delicious.
