How are you guys feeling about overnight oats right now? Are you over it already? Tired of all the cute jars of oats crowding up your Pinterest feed? Are you still in the lovestruck phase where you can’t get enough? The creaminess, the ease, the way the oats are tender but still toothsome, the sweet sweet sound of the lid popping off the jar in the morning, the utter deliciousness…
Clearly I am in the latter group. Overnite oats for lyfe.
I have always been a humungous fan of oatmeal. It was my breakfast of choice growing up (the kind with the melting dinosaur eggs FTW), and my love affair is still full steam ahead, albeit in a healthier direction. I usually favor cooked oats, but during the summer, sitting with a big bowl of steaming piping hot oats sometimes makes me feel like my face is going to melt off.
That is where overnight oats come in for the win. We can enjoy carb-y oat goodness all year long. ALL YEAR LONG.
I almost named this recipe Overnight Oats with lots of stuff, because toppings! Say hello to my little friends:
Cherries: Aka the star of this breakfast and quite possibly the star of summer. They are bright and juicy, with deeply sweet fruit notes. And their deep maroon color. Swoon.
Almond Butter: Cherries and almonds are like the power couple of the plant word. Their flavors enhance each other making the cherries taste fruitier and the almonds, nuttier. Plus, that dose of healthy almond protein in the morning helps this breakfast really stick with ya.
Banana: Was there ever an oatmeal recipe that didn’t include banana? Maybe. But it was a sad one. For extra sweetness, you can mash an extra banana into the oats before slipping them into the fridge to soak overnight.
Date Syrup: Whaaaaaaaa? Basically my new favorite food. Molasses meets caramel meets dates meets heaven. This sweet syrup can be found in specialty stores, international markets, and online. Search the far corners of the interwebs, inspect every last grocery store shelf, leave no international store unsearched. Find a bottle. Do whatever you have to do.
Chia Seeds and Chopped Almonds: The textural component. Theres something about texture. I’ve just gotta have it. Smooth oats are good, but sometimes my mouth is like, hey, this is boring. Adding in some good crunch keeps things interesting.
Six toppings. SIX amazing, oatmeal elevating, life altering toppings.

Confession time. I have been speaking of this recipe as breakfast. Because normal people eat oatmeal before noon, right? Yes. I however, eat this all day. Breakfast, lunch, or dinner. Most often for lunch. You can’t beat that grab and go convenience.
Enjoy these oats any time you please :)
- For the overnight oats:
- 1½ cup rolled oats
- 2 tablespoons chia seeds
- 2 cups vanilla almond milk
- ¼ cup coconut cream
- Pinch salt
- ½ cup cherries, pitted
- 2 tablespoons almond butter
- 2 tablespoons date syrup (or maple syrup)
- 2 tablespoons chopped almonds
- 2 teaspoons chia seeds
- 1 small banana, sliced
- Whisk together all of the overnight oat ingredients. Add to the fridge and let sit overnight.
- Split the oat mixture between 2 bowls, top each bowl with ½ of the topping ingredients. Serve.
