Easy 3 Ingredient Coconut Date Rolls are the perfect sweet dessert bite! These healthy paleo treats taste like gooey coconut caramels.
- 1 cup pitted medjool dates
- 1/3 cup unsweetened shredded coconut
- 8–10 almonds (optional)
- Add the dates to a food processor and process until the dates are broken down and a sticky ball forms.
- Add the coconut to a shallow boll. Roll the date mixture into 1 inch balls and then roll them in the coconut to coat. Press and almond onto the top of each roll and enjoy!
