Do you have a lot of travel plans? This time of year I find I do a lot of traveling. California for Thanksgiving, Montana for Christmas, Washington in between. And boy do I love it. Going to some of my favorite familiar travel destinations as well as exploring new locations just gives me a thrill! It mixes up life just enough to where I am excited for each new adventure, but happy to get back to my life at home.
Though I love, love, to travel, it can be hard on my diet. Finding gluten-free vegan food along the highway or in an airport proves to be quite tricky. When my tummy is growling and there isn’t a bite of safe food to be found this recipe has been my saving grace more than once.
These delicious little bites taste just like an oatmeal raisin cookie in sticky cookie dough form. And they are so simple to make! Throw 5 ingredients in a food processor and crank that baby until a dough ball forms. Roll into cookie dough bites and you are finished. Throw a few (or a few dozen) into a lidded plastic container and you’re ready to go. I can vouch that they make it through airport security without a hitch. They are the perfect bite sized travel snack that will give you the energy needed to make it to your destination. Travel on!
- 1/2 cup raisins , soaked in hot water for 5 minutes and drained
- 1 cup raw cashews
- 1 cup gluten-free oat bran
- 2 tablespoons coconut nectar (raw) OR gluten-free brown rice syrup (not raw)
- 1 teaspoon cinnamon
- pinch salt
Add the cashews to the bowl of a food processor. Pulse a few times until the cashews a course meal. Add in the remaining ingredients and process until a dough ball forms. Roll into roughly 12 cookie dough bites.
To increase their shelf life store your cookie dough bites in the fridge.
To keep the recipe raw, omit the coconut nectar.
